One of my goals for this year is to make more homecooked meals, lower my monthly grocery bill and eat healthier as a family. It's been going great! I used to do weekly pizza nights for the convenience and because the kids love pizza, but I started realizing that maybe that wasn't the best tradition. As a family we've eaten out just once and everything else has been home-cooked meals. It's been fun trying new recipes for the family. Yesterday we had this Blackened Tilapia with Zucchini, and it was delicious! Willow was so cute and checked out a Highschool Musical Recipe Book from the library at her school. Her and Kai spent some of their reading time one day flipping through it and writing down recipes they wanted to try. We narrowed it down to one and they made it yesterday and loved it! It was a simple pudding with fruit on top in an ice cream cone. They were proud of themselves and loved that it tasted good. I have enough ingredients for them to make it again today, so I'm going to let them make it completely on their own afterschool. I love that they're excited to try new things too!
